Here are some of
our favorite maple recipes at Hocking Hills Maple Farm... There are so many recipes and ideas we could never begin to share them all with you. All that will limit you is your own sense of imagination. Remember that this is the only sweetener that the native American people had available for many years so they found quite a few uses. Some other great uses, aside from pancakes, for maple syrup or sugar are... Over ice cream, in coffee or tea, hot cereals, sprinkled on donuts or toast, over vegetables such as squash or sweet potatoes, meat glazes, popcorn and yes even a few mixed cocktails. Some of the best and oldest recipes require nothing more than a pot and a candy thermometer. Have fun. Maple Sugar on Snow A traditional favorite. Boil maple syrup until it reaches 232 degrees F. Drop by small spoonfuls on hard packed snow or crushed ice. This one is great on ice cream as well. Maple Sugar Cinnamon Toast Add one cup of maple sugar to 1 teaspoon of cinnamon. Melt a quarter cup of butter or margarine in pan. Add the sugar and cinnamon and spread on toast. Place the toast under moderate broiler. Heat for a few minutes until mixture bubbles and watch carefully!
Maple Cream Candy Boil maple syrup briskly to 234 degrees F, or to soft ball stage. Keep sides of pan free from crystals. Pour syrup about 3/4 inch deep in shallow dish. Do not scrape pan when pouring syrup. Cool to lukewarm. When cooked, stir with spoon until light and creamy. Pour into a greased dish. Mark in squares.
Maple Sugar Candy Boil maple syrup to 236 degrees F. Stir while hot until milky in appearance and almost ready to set. Pour into muffin tins or molds. When cool, cakes will drop from mold or tin.
Maple Butter 1 stick butter 1/4 cup maple syrup Put in blender and mix well. Delicious on crackers or toast
Baked Maple Apples Wash and core good, tart apples. Place in a baking dish and fill the center with maple sugar or syrup. Pour a half inch of hot water in the baking dish to cover the bottom. Bake in a 350 degree oven until soft, basting occasionally with maple syrup.
Maple Nut Cookies 1 1/2 cups maple sugar 1 cup butter 3 eggs 3 cups flour 1 teaspoon baking powder 1 teaspoon baking soda dissolved in a 1/2 cup hot water 1 cup walnuts Mix maple sugar and butter until creamy and then add the eggs to this mixture. In a separate bowl, mix the flour, powder and baking soda. Add sugar/butter mixture to dry mix and then, add walnuts. Drop by teaspoon size on to pan. Bake at 350 degrees for 12-16 minutes. Maple Oatmeal Muffins 1 1/2 cups sifted flour 1/4 cup butter, softened 1/3 cup maple sugar 3/4 cup quick oats 3 tsp. baking powder 1 egg 1/2 tsp. salt 1/2 cup milk 1/2 cup maple syrup Preheat oven to 375 degrees F. Grease 16 muffin tins or line with paper liners. Sift together flour, maple sugar, baking powder and salt into bowl. Cut in butter. Stir in oats. Beat egg lightly, add milk and add this to bowl along with maple syrup. Portion batter among muffin pans. Bake about 20 minutes. Maple Pecan Pie 2 Tbs. butter 1 tsp. vanilla 1/2 cup sugar 1 1/4 cups maple syrup 2 eggs 1 cup pecans 2 Tbs. flour 1/4 tsp. vinegar 1/4 tsp. salt Unbaked 8" pie shell Preheat oven to 350 degrees F. Cream the butter and sugar. add unbeaten eggs and stir. Add nut meats. Place in oven and bake about 1 hour or until when lightly shaken it remains solid.

A little bit about the Hocking Hills. .
Not far from Hocking Hills Maple Farm's little sugar shack, the gently rolling wooded hills give way to unusual sandstone recess caves, rugged cliff sides and dense pockets of hemlock forests. Cascading waterfalls spill over into the dark crevices and at night, the sky fills with an astronomical delight of brilliant starlight. If you like to hike, horseback ride, canoe or rock climb, it's a great place to visit. Cabins, cottages and inn rooms dot the countryside. There are antique shops, golf courses and outdoor dramas close by. On the second weekend of March, Hocking Hills State Park celebrates Maple Sugaring in the Hills. Celebrate the season with tours and samples at the park!
